Chef and author Regina Charboneau showed me how to make a meal out of a simple sandwich using store bought rotisserie chicken, roasted red peppers and sun dried tomatoes.
1 round of herb Foccacia bread (or use any Italian bread)
sun dried tomato mayonnaise made from combining 3 tbs. sun dried tomatoes with 1/2 cup mayonnaise in a blender
2 cups of shredded rotisserie chicken
1/2 cup roasted peppers
1 1/2 cups of mixed greens with radicchio
Cut the Foccaccia bread in half.
Spread one side of the bread with the sun dried tomato mayonnaise.
Top with shredded chicken, roasted red peppers and mixed Greens.
Place the top of bread back on and cut into quarters.
