Roast Leg of Lamb with Currant Jelly Glaze

  • 1 6lbs leg of lamb
  • 1 clove garlic, slivered
  • 8-10 medium potatoes
  • 1 tsp salt
  • black pepper
  • 1/2 cup currant jelly
  • 1 Tbs vinegar
  1. Cut small slits into meat and insert pieces of garlic. Season with salt and pepper.

  2. Roast at 300 degrees F.

  3. Cook for about 3 hours. About an hour before the roast is done, place potatoes around the meat in the pan. Sprinkle with salt. Baste potatoes with fat from the pan.

  4. About 15 minutes before serving, baste the lamb with mixture of currant jelly and vinegar.

Serves 6-8
