Roasted Garlic Oven-Baked Chicken

1/2 pkg(1 pouch) Betty Crocker roasted garlic mashed potatoes
1/2 tsp ground cayenne pepper
1 egg
1/2 cup buttermilk or 2Tbs Saco Buttermilk blend in 1/2 cup water
4lbs chicken pieces
1 cup butter or margarine, melted
Heat oven to 425F Spray a 13x9x2 pan or line with foil and spray
Stir together dry potatoes and cayenne in a shallow dish
Beat egg with whisk in another shallow dish, until foamy; stir in buttermilk
Dip chicken pieces into egg mixture, then roll in potato mixture to coat Place in pan, presentation side down. Drizzle with butter.
Bake uncovered 20 minutes. Turn chicken; bake another 20 to 25 minutes or until coating is golden and juices run clear
