Roasted Honey Dijon Potatoes
1 pound potatoes, cut into 1 inch pieces
1 small onion, thinly sliced
1/4 cup dijon mustard
1/4 cup olive oil
1 tsp. honey
1 T chopped parsley
salt and pepper to taste
Pre-heat oven to 375°F.
Mix together mustard, honey, oil and salt and pepper. Mix potatoes and
onion slices. Pour sauce over vegetables and mix until well coated.
Place in a greased baking pan and bake for about 35-40 minutes or until
potatoes are tender. Sprinkle parsley over potatoes and serve.
