Roasted Pork Tenderloin with Veggies

1-2 pork tenderloins
2 Tbsp olive oil
2 Tbsp red wine vinegar
1 Tbsp Dijon mustard
1 tsp dried rosemary, crushed
1 tsp dried thyme, crushed
1/2 tsp garlic powder
1/2 tsp ground black pepper
1/2 tsp salt
3 c. potatoes, chopped
1 c. baby carrots
1 c. chopped green pepper
1/2 c. chopped onion

Preheat oven to 425 F. In a small bowl combine olive oil through salt; mix well. Brush half the herb mixture evenly over the meat. Place in shallow roasting pan. In a large bowl, combine remaining herb mixture with veggies. Place veggies around the meat . Place in oven and bake 30-45 minutes or until desired degree of doneness.
