Roasted Potatoes

2 lbs. Red skin potatoes…cut in large…diced…or thick slices
1/2 cup olice oil
Sprinkle garlic powder grandular to your liking
Salt-n- pepper to taste
Sprinkle rosemary to taste
Romano cheese grated finely

In a bowl gently toss all the ingredients together. Place the potatoes
in a greased pan…bake in a preheated oven at 350 degrees for 45 minutes or until tender and golden brown.

Remove from oven …transfer to plate and sprinkle cheese over top.
Serve hot.

Roasted Irish Potatoes

2 lbs Irish Potatoes, quartered or cut into large wedges
Melted butter or olive oil
3 Tbsp dried Italian seasoning
1 tsp ground sage
Salt & pepper
1/2-3/4 cup parmesean cheese

Scrub potatoes well and dry before quartering or cutting into large wedges. Dip each piece in butter or oil and sprinkle with seasonings which have been mixed together. Bake in a preheated 400 degree oven for 10 minutes then reduce heat to 350 and bake for an additional 30-40 minutes or until potatoes test tender and are lightly browned. Remove from oven; sprinkle salt, pepper and the cheese over them. Best served hot. Can substitute a four cheese Italian blend for the parmesean and just return to the oven until it melts.
