Roasted rack of lamb

I’ve just finished my dinner, and it was LOVELY! I made a roasted rack of lamb with vegetables and gravy for my parents and myself :mrgreen: I adapted the recipe from a lifestyle magazine that I picked up at my bank

2 racks of lamb
Handful of parsley, chopped
Handful of basil, chopped
2 red peppers, sliced
1 white onion, cut into wedges
1 red onion, cut into wedges
Olive oil
Salt and pepper
4 cloves of garlic (2 chopped, 2 crushed)

  1. Put the peppers, onions and crushed garlic in a baking tray. Drizzle with olive oil and roast for 10-15mins, around 200 degrees C
  2. Fry the racks of lamb, skin side down, in some of the olive oil for 10-15mins
  3. Mix 2-3tbsp olive oil, chopped garlic, parsley, basil, salt and pepper in a bowl
  4. Remove the tray from the oven and lay the lamb on top. Spread the herb mixture on the browned skin on the racks of lamb. Roast in the oven for 25-30 mins or so (remove depending on how you like your lamb. I like mine pink in the middle!)

I served the lamb on a bed of the roasted pepper & onions from the tray, with some broccoli, carrots, roast potatoes and gravy :mrgreen:
