ROOT VEGETABLE CHIPS

Very thin slices of parsnips, sweet potatoes, rutabaga, turnips, and/or beets are deep fried in hot oil, then seasoned with salt.

Oil for deep frying

Parsnips, sweet potatoes, rutabaga, turnips, and/or beets, peeled and very thinly sliced
Salt.

Heat oil to 375* F. . Peel and thinly slice vegetables. Place slices in bowl of ice water. Remove from water, drain very well, and pat dry with paper towels. Carefully place slices in hot oil. Fry until just starting to brown. Drain on paper towels and lightly salt while still hot.

I don’t know about the other ones but the sweet potatoes are also good sprinkled wiith a cinnamon/sugar mixture sprinkled on just after frying. My family would rather have these than store bought chips (salted ones) any day. Do you know if you can make these in the microwave?
