ROOT VEGETABLE CHIPS
Very thin slices of parsnips, sweet potatoes, rutabaga, turnips, and/or beets are deep fried in hot oil, then seasoned with salt.
Oil for deep frying
Parsnips, sweet potatoes, rutabaga, turnips, and/or beets, peeled and very thinly sliced
Heat oil to 375* F. . Peel and thinly slice vegetables. Place slices in bowl of ice water. Remove from water, drain very well, and pat dry with paper towels. Carefully place slices in hot oil. Fry until just starting to brown. Drain on paper towels and lightly salt while still hot.
