Rosemary & Garlic Roasted Sweet Potatoes & Onions

4 - 5 (about 2 Lbs) Med Sweet Potatoes, Peeled & Cut Into Thick
Wedges
1 Lg Onion, Peeled & Cut Lengthwise Into Thick Wedges
2 Tbsp Olive Oil
2 Cloves Garlic, Minced
2 Tbsp Fresh Rosemary Leaves, Chopped (or 1 Tbsp Dried)
½ Tsp Salt
¼ Tsp Black Pepper

Preheat The Oven To 425°f & Lightly Grease A Baking Sheet With Sides Or Shallow Roasting Pan.

In A Large Bowl, Toss Together The Sweet Potatoes, Onions, Olive Oil, Garlic, Rosemary, Salt & Pepper. Spread Out Onto The Prepared Baking Sheet Or Roasting Pan – Make Sure The Pan Is Large Enough So The Vegetables Are In A Single Layer. Place In The Oven & Bake For 40 = 45 Minutes, Turning Them Over Once Or Twice, Until Browned & Tender.
