Salisbury Steaks

20 saltine crackers, crushed
2 eggs, beaten
2 1⁄4 pounds ground chuck
salt and pepper
1 cup flour
1 teaspoon seasoned salt
2 tablespoons vegetable oil
2 packages brown gravy mix
1 can cream of mushroom soup

Stir together crushed saltines and beaten eggs. Mix into ground chuck; season with salt and pepper.
Shape meat mixture into 4 to 6 patties about 1⁄4 inch thick and about 6 inches across.

Combine flour and seasoned salt in a shallow bowl; dredge pat-ties in fl our- salt mixture. Heat oil in large, heavy skillet and brown patties on both sides (patties are large, so use care in turning).

Place in 9- by- 13- inch baking dish. Prepare gravy mixes as directed; add undiluted cream of mushroom soup, stirring well. Pour over steaks.

Cover and bake at 350 degrees about an hour. Serves 4 to 6.

A Salsbury steak is a fancy ground beef hamburger patty (made with ground beef, bread/cracker fillers, eggs and spices) that is covered with gravy and is eaten with a knife and fork (without a bun). Usually served with mashed potatoes on the side. It’s kind of like a flat meatloaf that is either pan fried or baked. It was popular in the 1950’s and 1960’s. This recipe is from the Cafe Indiana cookbook.
