Salmon with Mustard Maple Sauce

  1. 6-7 oz. piece center cut salmon fillet, skinned
    1 Tablespoon. vegetable oil
    3 teaspoon. water
    2 Tablespoon. Hot Mustard
    2 Tablespoon. pure maple syrup
    2 garlic cloves, finely chopped
    1/4 to 1/2 Tablespoon. cornstarch to thicken
    2 teaspoon. mustard seeds
    1/4 cup chopped scallions greens

Season salmon with salt and pepper. Heat oil in skillet until hot, saute salmon, transfer to platter and keep warm. Remove skillet from heat and cool 1 minute. Whisk ingredients in skillet and pour sauce over salmon before serving.
