Salmon Loaf sounds good today -

pick through and remove bones and skin from 3 cans salmon (use as many cans as you want); sprinkle with lemon juice, mix in salt, pepper, parsley, 2 x-lg eggs, grated onion, mayo and dry bread crumbs

shape into loaf and place in greased loaf pan or baking pan - place that pan in a larger pan of water (water bath) - bake 350* F. until top is brown and knife comes out clean

let sit 15 minutes before turning out and cutting

served with large green salad
