San Francisco Little Joe’s

Makes 4 servings.

Ingredients:

3 tablespoons vegetable oil
1 onion, chopped
1 pound lean ground beef
1 pound fresh spinach, washed, blanched and coarsely chopped (see cook’s note)
Salt to taste
Tabasco
4 eggs, lightly beaten
1 cup grated parmesan cheese

In large skillet, heat oil. Add onion. Cook over medium heat until soft. Add beef. Using fork, mix beef with onion and break up meat into small bits. Cook until redness is gone. Add spinach. Mix well.

Cook, stirring, for 3 to 4 minutes. Add salt to taste. Add dash or two Tabasco to beaten eggs. Pour eggs over beef mixture. Cook, stirring, until eggs set. Transfer to warm platter. Sprinkle with parmesan cheese.

Note: To blanch spinach, drop in pot of rapidly boiling water for less than 1 minute.
