Satay Burger



4 tablespoons creamy peanut butter
2 tablespoons coconut milk
2 tablespoons fresh lime juice, divided
1 tablespoon soy sauce, divided


1 pound lean ground beef
1 tablespoon fresh cilantro, chopped
2 teaspoons fresh ginger, grated
1 pinch red pepper flakes
4 hamburger buns
4 romaine lettuce leaves

Preheat grill.

Combine peanut butter, coconut milk, 1 tablespoon of lime juice and 1/2 tablespoon soy sauce. Mix until smooth.

In a separate bowl combine ground beef, 1 tablespoon lime juice, 1/2 tablespoon soy sauce, cilantro, ginger and red pepper flakes. Knead together and form into patties. Place patties on grill and cook until desired doneness. Remove from grill, place on buns and top with peanut sauce and lettuce.
