SAUSAGE AND PEPPER PIEROGIES
1 tablespoon vegetable oil
8 ounces Italian turkey sausage links, sliced
1 (16.9-ounce) package Mrs. T’s Potato and Cheddar Cheese or Potato and Onion Pierogies
1 large onion, cut in thin wedges (about 1 cup)
1 (14 1/2-ounce) can diced tomatoes
1/2 teaspoon dried oregano leaves, crushed
In a large nonstick skillet, heat oil over high heat until hot. Add sausage; cook and stir for 2 minutes until cooked through. Add frozen pierogies, onion and green pepper, cook and stir until vegetables are soft, about 5 minutes. Stir in tomatoes with their juice, and oregano. Reduce heat to medium; cook for 5 minutes, stirring often. Serve alone or spoon onto heated rolls.
