Sauteed Goat Cheese Cakes


1 cup leeks, diced
1 lb. goat cheese
1 cup flour
1 cup bread crumbs
2 eggs, beaten with water
1/2 cup garlic, minced
1 tsp. salt
1/2 tsp. pepper
1 tsp. cayenne pepper

In large fry pan saute leek until soft.
Empty into medium bowl.
Add in goat cheese, at room temperature, garlic, salt, pepper and cayenne pepper.
Mix well with hands.
Make shapes the size of a flattened egg.
Dip goat cheese shape into flour, egg and bread crumbs.
Fry on medium heat until golden brown.
Serve with salad.
