Savory Beef, Onions and Mushrooms

2 onions, sliced 3 T. olive oil 2 lbs. stew beef 3 T. flour 1 t. salt 1 t. pepper 1/4 t. thyme 2 c. beef broth 1 ( 6 oz. ) pkg. sliced mushrooms 2 T. vinegar 1 T. ketchup hot cooked rice
Heat oil in skillet over med. heat cook onions until tender. Add beef and brown. Stir in flour, salt, pepper, and thyme. Add broth, vinegar and ketchup. Stir to blend. Cover and simmer 1 hr. Add mushrooms and cook 30 more minutes. Serve over rice.
Served with salad and rolls.
