Scallions with Cheese Sauce

(4 servings)

4 bunches scallions, trimmed
3/4 cup chicken stock
2 tbsp butter
2 tbsp flour
1/4 cup half-and-half cream
1/4 tsp salt
dash of cayenne or Tabasco sauce
1/2 cup grated Cheddar cheese

Cook scallions, covered, in stock until just tender. Drain and keep warm. Reserve the liquid.

Melt butter, add flour and stir with wire whisk until blended. Meanwhile, bring reserved liquid and half-and-half to a boil and add all at once to the butter-flour mixture, stirring vigorously with whisk. Season with salt and cayenne. Add cheese and stir until melted.

Place scallions on a warm plate and cover with cheese sauce.
