School Cafeteria Cheese Salad Sandwich Filling

2 oz. protein per serving

6 c. cabbage, raw
3 c. carrots, raw
6 1/2 lb. cheddar cheese
1 1/4 c. mayonnaise
salt to taste

Coarsely chop vegetables and cheese.Add the mayonnaise and season. Mix
thoroughly. Serve on rye bread. Allowance, two tablespoonfuls per sandwich.
