School Cafeteria Mock Crabmeat Sandwich
50 Servings
2 oz. protein per serving
3 1/4 qt. fish flakes
1/3 c. lemon juice
1 1/2 c. mayonnaise
1 1/2 qt. celery, finely chopped
1/3 c. parsley, finely chopped
3 T. pimiento, chopped
1/3 c. onion, finely chopped
1 1/2 T. salt
1/2 t. pepper
100 slices bread
2 head lettuce
1 qt. mayonnaise
Flake fish, removing any bones and skin. Add lemon juice and mayonnaise
to fish and blend well. Add celery, parsley, pimiento, onion, salt, and
pepper. Spread mayonnaise on bread; using #24 scoop (1.5 ounces - 3 tablespoons).
place fish on bread. Top with lettuce leaf. Cover with second slice of bread.
