Scrambled Eggs with Cream Cheese

butter
4 eggs
4 ounces cream cheese
salt
pepper

Melt the butter in a pan over medium-low heat. In a bowl, mix the
eggs together. Once the butter is hot, pour the eggs into the pan.
Stir frequently until the eggs are mostly cooked. Add the cream
cheese in pieces (to help it melt more quickly) and continue to
stir. The dish is ready once the eggs have set and the cream cheese
is melted. Serve immediately.

I have seen scrambled eggs prepared in a double boiler, which I’m
sure would work equally well with this dish. In this case, I
believe you can omit the butter.
