Sea Foam Chews

2 cups [280 g] flour
2 teaspoons [10 mL] baking powder
1 teaspoon [5 mL] baking soda
1/2 teaspoon [2.5 mL] salt
1/2 cup [100 g] sugar
1 1/2 cup [375 L] brown sugar
1/2 cup [115 g] shortening
2 egg yolks
1 teaspoon [5 mL] vanilla
3 tablespoons [45 mL] milk
1 [6-ounce / 170 g] chocolate chips
2 egg whites
3/4 cup [190 mL] chopped nuts 



Preheat oven to 325°F [160°C].
Sift together flour, baking powder, baking soda and salt.
Cream together sugar, 1/2 cup [255 L] of brown sugar and shortening; add egg yolks, vanilla and milk to creamed mixture.
Mix in flour mixture.
Press dough into a 10 x 15-inch [25 x 38-cm] greased baking pan.
Sprinkle dough all over with chocolate chips; press into dough.
Into a clean bowl, beat egg whites until stiff.
Add remaining 1 cup [250 mL] brown sugar and beat until stiff.
Spread meringue all over dough, then sprinkle all over with chopped nuts.
Bake into preheated oven, for 30 to 35 minutes.
Leave to cool completely, onto a wire rack, before cutting into bars
