Seafood Omelet

Ingredients:
6 Large eggs
1 Tbsp. + 1/3 cup Butter, melted
2 Tbsp. Chopped green onion
1 tsp. Finely chopped parsley
1/4 lb. Peeled, cleaned, freshly boiled small shrimp
6 oz. can Crab meat
2 Tbsp. Cocktail sauce
Salt and pepper to taste
Sour cream and cocktail sauce for garnish

Directions: In a medium bowl beat eggs and 1 tablespoon of melted butter. Add green onion and parsley, mix lightly. In a warmed nonstick frying pan add 1/3 cup of butter and swirl it around to coat the skillet evenly. Add the egg mixture. As eggs cook, periodically lift up cooked edges, tilt pan and let uncooked egg run underneath. When eggs are set, place the shrimp, crab, green onion and cocktail sauce on top; season lightly with salt and pepper. Slide the omelet out of the pan and fold in half. Garnish with a drizzle of sour cream and cocktail sauce. Add an extra sprinkle of green onion.
