Ingredients:
2 bags of salad mix
4 lemons
1 lb of fresh scallops
1 lb of fresh shrimp (peeled and de-veined)
Salt & pepper
Extra virgin olive oil
Shredded carrot
1 can white canolini beans
Take juice of two lemons, pinch of salt and some pepper with a stream of olive oil to make marinade for seafood. Put seafood in glass bowl with marinade and refrigerate covered for at least 30 min.
Put salad mix, carrot and beans in large salad bowl. Take other two lemons, juice them and add salt and pepper and olive oil to make a dressing. Pour over salad mix and set in refrigerator till serving time. (Do not make this part unless you plan to serve right away).
Take marinated seafood and grill (either using indoor grill pan or skewer for outdoor grill) till caramelized and cooked through. Add cooked seafood to salad and toss lightly.
Serve immediately
What makes this salad so nice is the marinade and salad dressings are the same ingredients so it has fresh and brilliant flavors. Nothing complicated – just basic, good flavors.
