Seashore Bliss

1 lb. medium shrimp, shelled and deveined
1 lb. scallops (chopped if using sea scallops
2 C. rice
1 C. cream
1 C. butter, melted
1/2 C. clam juice
1/2 C. white wine or champagne
2 tsp. Old Bay seafood seasoning
4 cloves garlic, minced
3 T. chopped onion tops
1 C. cheddar cheese, grated

Place rice in a 2 qt. baking dish. Add scallops, then shrimp.

Mix cream, melted butter, clam juice, wine, seafood seasoning and garlic and add this mixture to the baking dish. Sprinkle with onion tops and then grated cheese.

Bake at 350º for 25 minutes

Serves 8 -10

I’m so glad I found this recipe. It’s an oldie but goody. We used to make this to serve to our judges at our figure skating competition. Oh, so rich and tasty. Thank you, Ladyseville!
