Secret Spice Cookies

Ingredients:
1 cup Oat flour (ground Quick Oats/Oatmeal)*
1 cup All-purpose flour
2 teaspoons Baking Soda
2 teaspoons Ground ginger
1 teaspoon Ground cinnamon
1/2 teaspoon Ground allspice
1/2 teaspoon Salt
1 cup Granulated sugar
1/3 cup Tomato Ketchup
1/3 cup Canola oil
1 Large egg
1/4 cup Molasses
1 teaspoon Vanilla extract
*Note: Grind dry quick oats/oatmeal in blender or food processor until they
become flour-like in consistency. (Approximately 1-1/4 cups of quick oats
will be needed – measure oat flour after processing.)
Instructions:

Preheat oven to 350 F.

Combine oat flour, all-purpose flour, baking soda, ginger, cinnamon,
allspice, and salt in a medium-size bowl; whisk to combine, and set aside. -
In a large mixing bowl, combine sugar, Ketchup, and oil. Using an electric
mixer, beat on medium speed for 2 minutes. -
Add egg, molasses, and vanilla and continue to beat just until mixture is combined.

Reduce speed to low and gradually add flour mixture until thoroughly combined.

Using a small scoop (approximately 1-1/2 tablespoons), form dough into
balls then roll in sugar to coat. -
Arrange dough balls 2 inches apart on baking sheet lined with parchment paper.

Bake at 350 F until cookies are golden brown on the edges and cracked on
top, about 10 to 12 minutes. -
Let cool 2 minutes on sheet tray. Transfer to wire rack to finish cooling.
