Is it safe to use vinegar that has gotten the sediment in the bottom of the bottle? In the past I have strained it through cheesecloth. Obviously I didn’t die but have always wondered if this was wise or not.

Yup, good stuff. Mother of vinegar can form in store-bought vinegar if there is some non-fermented sugar and/or alcohol contained in the vinegar. While not appetizing in appearance, mother of vinegar is completely harmless and the surrounding vinegar does not have to be discarded because of it. It can be filtered out using a coffee filter, used to start a bottle of vinegar, or simply left in and ignored.
Many people drink vinegar (1-2 tsp in glass of water) and prefer the cider vinegar that is unfiltered and contains the ‘mother’, believing it is far more beneficial than regular filtered cider/wine vinegars.
