Skewered meat dishes are called shish kebab in Armenian and Shashlik in Russian.
1 small leg of lamb
1 cup red wine
1/4 cup olive oil
2 garlic cloves, crushed
1 tsp salt
Freshly ground pepper to taste
1 tsp oregano
Green pepper squares
Trim leg of lamb and remove bone, gristle and remnants of fat. Cut meat into 2-inch cubes and marinate overnight in a mixture of wine, oil, garlic, salt, pepper and oregano.
Preheat broiler. String meat on skewers, alternating with mushrooms, tomato green pepper, onion and eggplant.
Brush with the marinade and broil beneath hight heat 5 minutes on each side.
