Shrimp and Mango Appetizer
The spectacular flavors of this elegant-yet-easy starter are great with mango or papaya.
Prep time: 15 minutes
Servings: 8 to 10 servings servings
1 1/2 pounds peeled cooked shrimp
1/4 cup ReaLemon® Lemon Juice from Concentrate
1/4 cup olive oil
2 tablespoons white wine vinegar
2 tablespoons chili sauce
1 tablespoon honey
1 teaspoon grated fresh ginger
1 clove garlic, finely chopped
1/4 teaspoon salt
Kale or lettuce
1 medium mango or papaya, peeled, seeded, and sliced
Place shrimp in medium-sized deep bowl. For marinade, combine ReaLemon, oil, vinegar, chili sauce, honey, ginger, garlic and salt in screw-top jar. Cover and shake well. Pour over shrimp. Marinate in refrigerator 2 to 4 hours, stirring occasionally.
Drain shrimp, discarding marinade. Transfer shrimp to serving bowl. Arrange kale or lettuce and mango or papaya around shrimp.
