Shrimp Breakfast Scramble

1 small onion, chopped 1/4 c. chopped green pepper 1 clove garlic,minced 3 T. butter 1 ( 5 oz. ) pkg. frozen salad shrimp, thawed 8 eggs, slightly beaten 1/2 t. salt 1/2 t. pepper 1 c. co-jack cheese
In a large skillet saute onion, green pepper and garlic in 1 T. butter. Stir in shrimp. Remove to a bowl. In same skillet , melt remaining butter over med. heat. Add eggs, cook and stir until set. Stir in shrimp mixture salt and pepper. Sprinkle with cheese. Remove from heat. cover and let stand a few minutes till cheese is melted. Serves 4.
