1 medium head romaine, trimmed, chopped, washed and dried
1/2 c Caesar salad dressing, plus more for dipping, if desired
1/4 c fresh grated Parmesan cheese
150 grams shrimp
4 10-inch tortilla shells
Place the romaine and dressing in a bowl and gently toss to combine. Divide and place salad down the centre of each tortilla. Arrange the shrimp in a row alongside the lettuce. Sprinkle with Parmesan cheese. Fold the sides of the tortilla partially over the filling and then roll up. Cut in half at a slight angle and arrange on plates. If desired, serve the additional Caesar salad dressing alongside for dipping. Makes 4 servings.
