Shrimp fra Diavolo
Ingredients
◦1 1/4 lb large shrimp, peeled & deveined.
◦1 teaspoon salt
◦1 teaspoon sugar
◦1 medium onion, chopped
◦28 oz can diced tomatoes with juice
◦1 teaspoon cornstarch
◦4 tablespoons fresh basil, chopped
◦3/4 teaspoon red pepper flakes
◦4 tablespoons extra virgin olive oil, divided
◦2 cloves garlic, minced
◦1 1/2 cup dry white wine
◦4 tablespoons fresh parsley, chopped
◦1/2 teaspoon dried oregano
Instructions
1.Cook onions in 2 tablespoons of oil in skillet until translucent.
2.Add tomatoes, garlic, sugar and oregano.
3.Simmer about 30 minutes.
4.Add wine, cook another 20 minutes.
5.Meanwhile put 2 tablespoons oil in a large fry pan.
6.Add red pepper flakes and cook on medium for a second.
7.Add shrimp, cook and toss until shrimp is almost cooked.
8.Add tomato mixture, sprinkle with cornstarch.
9.Cook 10 more minutes.
10.Add basil and parsley, serve over angel hair pasta or linguini.
