Shrimp in Garlic Cheese Sauce

2 cups peeled & deveined Shrimp
1 1/2 cups chedder cheese
2 tablespoons parmesan cheese
4-5 cloves garlic finely minced
1 tablespoon flour
2 tablespoons butter
1/2 onion diced
1/2 sweet pepper diced
1 cup cows milk
salt & pepper to taste

Season shrimp with salt & pepper and 1/4 of the minced garlic and let stand for 1/2 hour. Melt butter in skillet, add remaining garlic, sweet pepper and onion and stir fry for 30 seconds. Add flour to make roux (stir constantly). Add milk and stir to remove lumps. Add cheeses and add salt if necessary. Add more milk if sauce gets too thick. In another skillet, fry shrimp in butter until opaque in color. Add to cheese sauce and serve with white rice or pasta.
