Shrimp Quiche

Shrimp Quiche

1 9" deep dish pie shell – partially baked
1/2 cup onion – chopped
2 tablespoons butter
3 large California Fresh Eggs
3/4 cup whipping cream
3/4 cup milk
1/2 teaspoon salt
1/2 teaspoon grated lemon peel
Nutmeg – to taste
5 ounces cooked baby shrimp – if frozen thaw and drain well
1 1/2 cups shredded jack cheese
1 tablespoon flour

Preheat oven to 350º. Sauté onion in butter until tender. Whisk together eggs, cream, milk, salt, lemon peel, nutmeg and onion. Add shrimp, cheese and flour. Pour into pie shell. Bake for 30-40 minutes or until knife inserted in center comes out dean.
