Shrimp Salad

16 oz cooked shrimp
1/3 c chopped onions
1 celery rib, chopped
2 T chopped cilantro or use parsley instead
1 t lemon juice
1/2 t sugar
1/2 c mayo
1/8 t hot sauce, more to taste
1/8 t paprika
1/8-1/4 t pepper

In a large bowl, toss together shrimp, onion, celery and cilantro. Stir together remaining ingredients and pour over shrimp salad mixture. Stir well. Chill for at least 2 hours. Enjoy on a bed of greens or as a sandwich filler. Makes 4ā€”6 servings. (When I make this Iā€™m going to substitute softened cream cheese for the mayo.)
