Skillet Barbecue Chicken and Rice
Yield: 4 Servings

1 lb Boneless, skinless Chicken Breasts cut into strips
2 tb Oil
1 1/2 c Barbecue sauce
1 c Water
1 cn (11oz) whole kernel corn, Drained
1 Small green pepper, chopped
2 c Minute Original Rice, Uncooked

Brown chicken in hot oil in a large skillet on medium-high heat. Stir
in barbecue sauce, water, corn and pepper; bring to a boil. Reduce
heat; cover and simmer 5 minutes. Stir in rice; cover. Remove from
heat. Let stand 5 minutes
