Skillet Cornbread

1 cup yellow corn meal
1 cup all purpose flour
4 tablespoons of sugar
4 teaspoons of baking powder
1/2 teaspoon salt
1 cup of milk
1 egg
1/4 cup bacon drippings

In a large bowl, combine all dry ingredients.
In a seperate bowl, beat together milk, egg and
bacon drippings, add to dry ingredients and stir
until fairly smooth, about 1 minute.

Pour mixture into a greased 10 inch cast iron skillet,
if you don’t have a cast iron skillet you can use an 8
inch square baking pan. Place in preheated 425 degree
oven and bake 20 to 25 minutes or until lightly browned
on top and toothpick inserted in the center comes out
clean.
