3-1/2 lb. pork shoulder roast, trimmed of fat
1 Tbsp. Cajun seasoning
1 Tbsp. Tabasco
1 can (14.5 oz.) diced tomatoes, undrained
12 Kaiser rolls
12 slices Monterey Jack cheese with jalapeño peppers
12 lettuce leaves
12 sliced fresh ripe tomatoes
Place pork in 4 qt. slow cooker. Sprinkle with Cajun seasoning and Tabasco. Pour tomatoes over pork.
Cover and cook on LOW for 10 hours.
Remove pork from slow cooker, place on cutting board. Shred using two forks, discard the bones. Return pork back to cooker and mix well. Using slotted spoon to remove pork from cooker, fill each roll with 1/2 cup pork. Top with cheese, tomato and lettuce.
