Smartie souffle pancake



2 eggs, separated
2 T. icing sugar
2 T. dark chocolate, melted
½ packet of Smarties


2½ oz. flour
1 egg
¼ pint milk


2 oz. dark chocolate

Preheat oven to 425* F.

SOUFFLE: Beat egg whites to form soft peaks. Add icing sugar and whisk until whites become stiff and glossy.
Place melted chocolate into large bowl and stir in egg yolk and Smarties.
Gently fold egg whites and set aside.

PANCAKE: Combine flour and egg in bowl and, stirring all the time, add enough milk to give a smooth batter with the consistency of double cream.
Heat a small non-stick-frying pan, brushed with a little oil, and ladle batter into pan, swirling the pan to evenly spread. Gently fry for 1-2 minutes each side, tossing to turn.

Spoon the soufflé mixture into pancake and fold over.

Transfer the pan to the oven and bake for 5-6 minutes or until risen and golden.

To serve, place the chocolate in a bowl over a pan of simmering water and heat until melted. Transfer the soufflé pancake onto a serving plate and drizzle the chocolate sauce over to finish.
