This recipe is from The Lady and Sons ( Paula Deen) cookbook.
4 lb. pork butt roast 1 T. salt 2 t. garlic powdre 2 t. pepper 2 T. liquid smoke 1 onion, diced 1/2 c. water 2 bay leaves
Rub liquid smoke on all sides of roast. Combine salt, pepper, and garlic powder rub into roast. Place in roasting pan, add onion, water, and bay leaves. Bake covered at 350 for 2 1/2 hrs or until tender.Cool slightly for easier slicing. Serve with your favorite barbecue sauce.
I served with corn on the cob , hoe cakes and white beans. Tomorrow night I will shred up leftovers bake for a while in barbecue sauce and serve on a bun with baked potatoes and cole slaw.
