Smoky Cheese Bites

  Yield: 5 Dozen

  2 c  Flour
1/2 ts Salt
1/4 ts Cayenne
1/2 lb Smoked Cheddar cheese;
       .. grated
  1 c  Butter; softened
  6 oz Hickory smoked almonds
  1. Mix flour, salt and cayenne; blend in cheese.
    Cut in butter until mixture resembles coarse meal.
    Knead until smooth.

  2. Preheat oven to 425°. Grease baking sheets.

  3. Roll out dough 1/4" thick. Cut into 1 1/2"
    rounds with floured cutter; transfer to sheet,
    topping with an almond. Bake 10 to 12 minutes or
    until lightly browned around the edges. Store
    airtight.
