Snow Day Vegetable Soup

1 1/2 sticks butter 3 celery stalks chopped 1 onion, chopped 1/2 clove garlic minced 3 potatoes, diced 3 carrots, diced 1 1/2 t. each dried parsley, thyme and basil 2 bay leaves 1/2 t. garlic salt 1 can chicken broth 1 can water 1 can tomato paste 1 141/2 oz. can diced tomatoes 1c. each frozen green beans, corn and peas
Melt butter in dutch oven add celery onions garlic, potatoes and carrots.Saute until slighty tender. Add remaining ingredients bring to a boil and reduce to simmer and cook 1 hr or untilvegetables are tender.

Served with tuna sandwiches. It hasn’t snowed in Tennessee yet but we had a 35 degree overnight dip in temps with wind and drizzle , so the snow day soup and sandwiches were pretty tasty on a cold Sat!
