Snowball Cookies

  1. 1 cup butter softened

  2. 1/2 cup confectioners sugar

  3. 1/2 teaspoon salt

  4. 1 teaspoon almond extract

  5. 1 teaspoon vanilla

  6. 2 cups all-purpose flour

  7. 1 1/2 cups finely chopped walnuts (or pecans)

  8. Preheat oven to 350

    1. Mix butter with sugar until creamy and fluffy in a electric mixer. Add salt, almond extract or vanilla extract, flour and nuts. Mix well.
    1. If dough is too soft, chill until firm enough to shape into balls.
    1. Shape into 1 inch balls, place on ungreased cookie sheet about 1/2 inch apart. They will basically keep the same shape while baking so you don’t have to worry about spreading. Bake 10-12 minutes. Cool on cooling racks.
    1. Once cooled, roll each cookie into a bowl of powdered sugar until completely coated.
