Some quick help, please!!

Does anyone have an awsome sauce for broccli, that can be made fairly fast?

I know its to easy but melted Velvetta cheese is the best!!! You can add cayanne pepper or any other spice to your liking.

BROCCOLI WITH BUTTER SAUCE

2 bunches broccoli
4 tbsp. butter

Cut broccoli into flowerets. Peel the stems. With the julienne blade in place and using the small feed tube, stand stems vertically and process. Bring 2 quarts of salted water to a boil over high heat. Add flowerets and let water return to a boil. Immediately drain the flowerets and blanch in cold water. Melt 3 tablespoons of the butter in large skillet over medium heat. Saute the stems until crisp tender (about 4-5 minutes), stirring occasionally. Reheat flowerets in remaining butter. Arrange the stems on a platter and place the flowerets attractively on the bed of stems. Pour Butter Sauce over all.

BUTTER SAUCE:

1/2 c. butter
4 tbsp. lemon juice
1 garlic clove, minced
1/4 tsp. oregano
1/4 tsp. salt
Freshly ground black pepper

Combine and heat.

BROCCOLI WITH DEVILED CREAM SAUCE

3 lbs. fresh broccoli or three 10 oz. pkgs. frozen broccoli spears
2 tbsp. butter
2 tbsp. all-purpose flour
1 1/2 tsp. dry mustard
1 tsp. brown sugar
1/2 tsp. Worcestershire sauce
1/4 tsp. salt
1 c. milk
1/2 c. dairy sour cream

Wash fresh broccoli; trim and cut into spears. Cook in boiling, salted water, covered, about 15 minutes or until tender. (Or cook frozen broccoli spears according to package directions). Drain.
Arrange broccoli in a shallow serving dish; keep warm. In saucepan melt butter. Blend in flour, dry mustard, brown sugar, Worcestershire sauce, salt and dash pepper. Add milk all at once.

Cook and stir until thickened and bubbly. Stir a small amount of hot mixture into sour cream. Return all to hot mixture in saucepan. Heat through but do not boil. Spoon sauce over broccoli in serving dish. Sprinkle with toasted slivered almonds, if desired. Makes 10 servings

BROCCOLI WITH MORNAY SAUCE

For 4 servings: 1/2 c. finely chopped onion 2 tbsp. butter 3 tbsp. all-purpose flour 2 c. milk 1/4 c. grated Swiss cheese 1/2 tsp. salt 1/8 tsp. white pepper Dash nutmeg 1/4 c. grated Parmesan cheese 1/4 c. fine, dry white bread crumbs 2 tbsp. melted butter

  1. Cook broccoli in boiling salted water for 5 minutes or until almost tender. Refresh under cold water. Drain well.

  2. In medium saucepan, saute onion in butter 3 minutes.

  3. Add flour. Stir constantly over low heat for 1 minute.

  4. Add milk, whisking constantly. Cook over medium-high heat, whisking constantly, for 5 minutes. Mixture will thicken.

  5. Stir in Swiss cheese, salt, pepper and nutmeg.

  6. Coat bottom of 1 to 1 1/2 quart casserole dish with sauce. Arrange broccoli over sauce. Pour remaining sauce over broccoli.

  7. Combine Parmesan cheese and bread crumbs. Sprinkle over casserole.

  8. Drizzle with melted butter.

  9. Bake, uncovered, at 375 degrees for 20 to 25 minutes or until lightly browned.

BROCCOLI WITH OWN CHEESE SAUCE

1 1/2 lbs. fresh broccoli
2 slightly beaten eggs
3/4 c. cottage cheese
1/2 c. shredded Cheddar cheese
2 tbsp. finely chopped onion
1 tsp. Worcestershire sauce
1/4 tsp. salt
1/8 tsp. pepper
1/4 c. fine dry bread crumbs
1 tbsp. melted butter

Wash and trim broccoli. Cut into spears. Cook broccoli covered in a small amount of water about 10 minutes or until crisp tender and drain. In a bowl combine beaten eggs, cottage cheese, cheddar cheese, onion, Worcestershire sauce, salt and pepper. Arrange broccoli in a shallow 1 1/2 quart baking dish. Spoon cheese mixture over it; stir together bread crumbs and butter. Put over cheese mixture. Bake uncovered in 350 degree oven 15 to 20 minutes or until heated through and egg mixture is set.

Good Idea, but unfortunately when I looked didn’t have any Velveeta on hand.

SOURCE	FRUGAL GOURMET                                          
	                                                               
	Sharp cheddar cheese                                           
	Hot milk                                                       
	Worchestershire sauce                                          
	salt to taste                                                  
	Dry sherry                                                     

This sauce is so simple, but good.

Melt cheddar cheese in a little hot milk on the stove.
Add a little Worchestershire sauce, salt, and a tad of dry sherry.

Great over eggs, muffins or vegetables.

My note: Mix in a little blue or stilton cheese for added zing.
Also may be thickened with a roux.

Portions are up to how much sauce you want or need.

Shadows - I don’t care for sherry. I usually substitute red wine when a recipe calls for it. Can I use it in your cheese sauce recipe? Or would white wine work better? Or it does it really matter?

Broccoli with Sesame Sauce

Ingredients :

2 lb Broccoli, trimmed
1/4 cup Soy Sauce
1/2 tsp Honey
2 tbl Sesame Oil
1/4 cup Sesame Seeds, toasted
6 x Lettuce,Romaine, leaves

Method :

* Chop broccoli into florets and steam 4 to 5 minutes, until just tender; Chill.
* Mix remaining ingredients in a large bowl. Add broccoli and marinate for 1 hour.
* Serve on a bed of lettuce leaves.

Broccoli with Sesame Oil

Ingredients :

Sesame oil
Soy sauce*
Toasted sesame seeds
Broccoli

Method :

* * - Or vinegar
* 1. Blench broccoli by dropping it into boiling water for 2 or 3 minutes, then quickly "refresh" it by running it under cold water.
* 2. Dress with sesame oil and soy sauce (or vinegar) to taste, then sprinkle with toasted sesame seeds. Add the dressing just before serving (at room temperature) or it will discolor the broccoli.

Broccoli with Mustard Butter Recipe

The mustard butter would also be very good on a lot of other vegetables-carrots, potatoes, asparagus, cauliflower, etc.

2 tablespoons Dijon mustard
1/4 cup butter, room temperature
2 1/2 lbs broccoli, cut into florets
6 servings

  1. In a small bowl mix mustard and butter, set a side.
  2. Can be made ahead and refrigerated, covered.
  3. Bring to room temperature before proceeding.
  4. Steam broccoli until crisp tender and transfer to a large bowl.
  5. Add mustard butter and toss until melted and broccoli is well coated.
  6. Season with Salt and pepper.
  7. Serve.

Broccoli with Creamy Lemon sauce
Very lemony, very good. Also good over whole cooked green beans.

2 tablespoons fat-free mayonnaise
4 1/2 teaspoons low-fat sour cream
1 tablespoon fat free skim milk (I use 2%)
2 teaspoons lemon juice
1 teaspoon lemons, zest of
1 1/4 cups cooked hot broccoli florets
2 servings

  1. Combine all the ingredients except the broccoli in the top of a double boiler, Cook over simmering water 5 minutes or until heated through, stirring constantly.
  2. Serve over hot cooked broccoli.
  3. This is also very good over hot cooked green beans.

BROCCOLI WITH BLEU CHEESE SAUCE

2 c. milk
4 tbsp. flour
1 (16 oz.) pkg. cream cheese, softened
1 oz. Bleu cheese
1 1/2 tsp. salt
1/2 tsp. white pepper
2 1/2 lbs. fresh broccoli
1/2 c. bread crumbs
1/2 stick butter

Heat milk. Blend in flour, cream cheese, Bleu cheese, salt, pepper and stir over low heat until smooth. Cook broccoli until barely tender. Drain and place in 3 quart casserole and pour cheese sauce over broccoli. This may be prepared a day ahead. Bake at 350 degrees for 50 minutes. Top with bread crumbs. Dot with butter and return to oven for 10 minutes.

BROCCOLI SOUFFLE WITH CHEESE SAUCE

butter
Grated Parmesan cheese
1 pkg. (10 oz.) frozen chopped broccoli, thawed
3 tbsp. each butter & all-purpose flour
1 c. milk
1 tsp. salt
1/4 tsp. grated nutmeg
1/8 tsp. pepper
1/4 c. shelled sunflower seeds
5 eggs, separated
About 1 tbsp. shelled sunflower seeds (opt.)

Preheat oven to 375 degrees. Generously butter a 1 to 1 1/2 quart souffle dish or casserole. Sprinkle with Parmesan cheese, turning dish to coat bottom and sides; set aside. Drain broccoli in colander and press out any excess liquid with a spoon; set aside.

In a 2 quart pan over medium heat, melt the 3 tablespoons butter. Blend in flour and cook, stirring, until bubbly. Gradually pour in milk nd continue cooking and stirring until sauce boils and thickens. Stir in salt, nutmeg, pepper and the 1/4 cup sunflower seeds and broccoli; remove from heat. Add egg yolks, beating vigorously with a wooden spoon. Whip egg whites until stiff, moist peaks form; carefully fold egg whites into sauce. Pour mxiture into prepared souffle dish. If desired, top with about 1 tablespoon sunflower seeds. Bake uncovered at 375 degrees for about 30 minutes or until a wooden pick inserted in center comes out clean. While souffle bakes, prepared sauce to serve at the table. Serve souffle immediately. Serves 4.

Red wine might make the color a little different, but if that does not matter to you then by all means use it. I would recommend a Blush if Sherry turns you off or a good Sauturne.

The amount of Sherry I use for this is only about a Tbls for a good size batch of sauce, no more then you get in Oriental foods.

"Sweet Broccoli Sauce

Mayo, lemon, sugar to taste.
This is very quick, I usually add califlower and onion tops. It tastes good.
