Sour Cream Green Bean Salad
4 cups cold cooked beans
2 green onions or 1 small onion
1 tablespoon sugar
1 tablespoon cider or white vinegar
1/2 cup dairy sour cream
salt and pepper to taste
Schnippel the beans by cutting them on the bias in very long, thin slices.
Place in a bowl and add onion. Blend remaining ingredients, pour over beans and toss lightly.
NOTE: A superb dish prepared with fresh green or wax beans. To schnippel
the fresh beans takes a little longer, but it’s worth the trouble.
