Sour Cream Ham Omelet

5 egg yolks
1 c. dairy sour cream
1/4 tsp. salt
5 stiffly beaten egg whites
1 c. finely diced fully cooked ham
2 tbsp. butter or margarine

Beat egg yolks till thick & lemon colored, about 5 mins. Beat in half of the dairy sour cream & the salt. Fold in stiffly beaten egg whites & diced fully cooked ham. Heat butter in 10" oven going skillet. Pour in omelet mixture, leveling gently. Cook over low heat until lightly browned on bottom, about 10 mins. Finish cooking at 325 F. till top is golden brown, about 12 to 15 mins. Loosen omelet, slide onto warm plate. Separate into wedges w/2 forks. Garnish w/remaining sour cream.
