Sour Cream- Pineapple Cake
1 Cup Butter
2 1/2 Cups Sugar
5 Eggs
3 Cups Sifted Flour
1 Tbs Baking Powder
1/2 Tsp Salt
1 (8oz) Sour Cream
2 Tsp Vanilla
Cream together butter, sugar until light & fluffy. Add eggs 1 at a time and beat well. Add flour, baking powder & salt alternately with sour cream. Add vanilla & beat until smooth but no longer. over beating will make the cake tough. Pour batter in 3 - 9 inch pans greased & lined with wax paper. Bake at 350 degrees for 23-30 minutes.

1 (2oz) can Crushed Pineapples, undrained
1 Cup Sugar
4 Tbs Flour
1/4 Cup Margarine
1/2 Can Pineapple water
Combine sugar and flour, Stir in pineapple and juice, water and butter. Mix well and cook over medium heat until mixture thickens and becomes glossy , about 5 minutes, spread on warm layers & let cool slightly before stacking layers. Makes about 16 servings
