Souse (Pickled Pig feet or trotters)

Boil or pressure cook pig feet, trotters or ears or a mixture until tender but not fallling off the bone
Rinse
cover with plain water
Add chopped onions vinegar salt to make a pickled brine
Add a little mustard and pepper or hot sauce to taste.
Leave over night to marinate and adjust to taste the next day.
Serve with crusty bread to soak in brine when eating the meat
