South American Alfajores Sandwich Cookies

From Paul Humble from the Sun Dog Café, St John, Virgin Islands.
These sinfully rich sandwich cookies are traditional All Saints’ Day treats from South America.

Yield: 18 sandwich cookies


For cookies:
3/4 lb. butter (3 sticks)
3 cups flour
1 1/2 cups sugar
Pinch nutmeg
Pinch cinnamon
1 Tbsp lemon juice
1 tsp vanilla

For filling:
1 can sweetened condensed milk

First, make the filling for the cookie sandwiches - dulce de leche. Empty the sweetened condensed milk into a heavy saucepan and bring to a boil. Reduce heat and simmer, stirring occasionally, for 1 to 1 1/2 hours. You’re looking for a thick, glossy caramel-like consistency.

Now, it’s time for the cookies. Preheat oven to 350 degrees F.
Combine all ingredients and mix well with a hand mixer or a stand mixer until it comes together into a dough.
Roll dough out to 1/4 inch and cut into desired shape.
Place on non-stick cookie sheet and bake for 6-8 minutes.

Once cookies have cooled, spread dulce de leche between pairs of cookies. Dust with powdered sugar and/or dip them in chocolate. Enjoy!
