Southern Sweet Potato Bread

1-1/2 cups Self-Rising Flour
1 cup sugar
1 tsp. nutmeg
1/2 tsp. cinnamon
1/2 cup oil
2 Tbsp. milk
2 egg, slightly beaten
1 cup mashed cooked sweet potatoes
1 cup chopped pecans or walnuts
1/2 cup golden raisins

Preheat the oven to 325*F.

Grease the bottom only 8x4" ;l
loaf pan. In large bowl, combine flour, sugar, nutmeg and cinnamon, mix well.

Add oil, milk and eggs, blend well. Add sweet potatoes, pecans and raisins, mix well. Pour into greased pan.

Bake for 1-1/2 hours or until pick comes out clean. Cool in pan 15 minutes. Remove from pan, place on wire rack. Cool for 1 hour or until completely cooled.

I some times use 1 cup firmly packed dark brown sugar it really gives it a good taste.
